Detailed Instructions

 Step 1  Select Oysters

Choose fresh live oysters from reputable stores. Fresh oysters have tightly closed shells, feel heavy, and have a distinctive sea smell. Avoid oysters with cracked or open shells.

Frozen oysters: Oysters with a closed shell, not cracked or broken, not watery and still frozen.

 Step 2  Prepare the Oysters
1.    Rinse the oysters: Rinse the oysters under cold running water to remove mud and debris from the shells.
2.    Soak the oysters: Soak the oysters in diluted salt water for about 10 minutes to help them expel any sand and impurities inside.
3.    Rinse again: After soaking, rinse the oysters again under cold running water.

 Step 3 Open the Oysters

  1. Prepare an oyster knife: Use a specialized oyster knife that is sharp and sturdy.
  2. Open the oysters: Place the oyster on a towel to prevent slipping, and gently pry open the hinge with the knife. Once the shell opens, use the knife to carefully detach the oyster meat from the shell.
