How To Cook Australian Green Abalone

Ingredient:
• 4 greenlip Australian abalone, cleaned and gutted
• 4-6 cloves of garlic, minced
• 2 tablespoons butter
• 2 tablespoons of onion fat
• 1 tablespoon white wine (optional)
• Salt and pepper
• Fresh basil or fresh cilantro, for garnish
Method:
- Prepare abalone: Wash the abalone under cold water, then use a knife to remove the intestines from the middle of the abalone. Invert the abalone to remove all the intestines and wash again.
- Prepare sauce: In a small pan, heat butter and onion fat over medium heat, then add minced garlic. Stir until the garlic is lightly browned, then add white wine if using. Continue stirring for a few seconds to let the alcohol evaporate.
- Grill abalone: Before grilling, you can sprinkle a little salt and pepper on the surface of the abalone to add flavor. Then, apply the garlic butter sauce just prepared in the previous step on the abalone.
- Grill abalone: Place abalone on an oiled grill or grill pan and heat. Grill each side for about 2-3 minutes or until the abalone is cooked and has a nice golden color.
- Finishing: When the abalone is cooked, you can garnish with fresh basil or fresh coriander for a pop of color and flavor.
