Simple Guide to Prepping & Cooking Oysters

What are whole shell oysters?
Oysters are nutritious and rich in minerals, especially zinc. They offer numerous health benefits and can be prepared in various ways. Popular dishes include oyster porridge, grilled oysters with onion or cheese, and fried oysters with eggs.
Before cooking, oysters need to be prepped properly to remove their fishy smell while maintaining their natural flavor. Here are some simple steps to do so.
Preparing whole shell oysters
Method 1:
- If using frozen oysters, defrost them first.
- Scrub the shells under cold water using a brush.
- Use a dull knife or oyster shucker to remove the shell by inserting the knife near the hinge and twisting.
- Protect your hand with a thick glove to prevent injury from slipping knives. Open the shell, cut the muscle, and retain as much oyster liquor as possible.
- If not using oyster halves, drain and strain the liquid to remove shell fragments or sand.
Method 2:
- Oysters can also be opened by steaming. Place cleaned oysters in a pot with minimal water (no more than 1/2 cup for two dozen medium oysters).
- Steam for 5-10 minutes until the shells open. Use within one or two days in cooked dishes.
Note:
Avoid overcooking oysters. Use medium heat and cook until they puff up or the edges curl.
