Abalone with shiitake mushroom sauce

Ingredient:
- 200g fresh or frozen abalone
- 200g fresh shiitake mushrooms
- 1 purple onion, thinly sliced
- 2 cloves of garlic, minced
- 1/2 green onion, chopped
- 1/2 onion, cut into pieces
- 1/2 carrot, cut into strips
- 1/2 red chili, thinly sliced
- 2-3 tablespoons cooking oil
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1/2 teaspoon sugar
- Pepper, salt and seasoning to taste

Doing:
1. Prepare abalone and shiitake: If using fresh abalone, wash and chop into bite-sized pieces. If using frozen abalone, let them melt completely before using. Shiitake mushrooms cut into small pieces or halve depending on the size of the mushrooms.

2. Stir-fry mushrooms and shallots: In a hot pan, pour oil and sauté the shallots until fragrant. Then add the shiitake mushrooms to the pan and saute for about 3-4 minutes until the mushrooms are cooked and seasoned. Let the color and crispiness of the mushrooms be preserved.

3. Stir-fry abalone and vegetables: Push the mushrooms and shallots to one side of the pan, then add the abalone to the pan and sauté for about 2-3 minutes until the abalone is cooked and the meat becomes tender. Mix well with mushrooms and shallots.

4. Add the garlic and vegetables: Next, add the minced garlic, scallions, spring onions and carrots to the pan. Stir-fry for about 2-3 minutes until the vegetables are tender but still crispy.

5. Seasoning and Finishing: During stir-frying, add fish sauce, soy sauce, sugar, pepper and salt to your taste. Stir and re-season if needed. Finally, add the red pepper slices to the pan and sauté quickly for another 1-2 minutes.

6. Remove to a plate and enjoy: Place the dish on a plate and garnish with fresh green onions. Abalone sauteed with shiitake mushrooms is fresh and delicious, ready to eat.
